Each morning, David Wang expertly cooks up three to eight pounds of rice for Sushi Han, one of the long-running restaurants at Blundell Centre.

Three pounds, Monday to Thursday, and eight pounds on Fridays and Saturdays.

That sets the stage.

“My wife, she’s the one who has all the sushi talent,” jokes Wang as he gets the rice ready for his wife, Jane Jian, to arrive and begin creating the dishes that have been a favourite with customers for close to three decades.

Located adjacent to the Bank of Montreal branch at Blundell Centre, the couple turns out scores of meals six days a week.

They took over the business from the original owner who retired two and a half years ago and put to good use Jane’s vast experience as a sushi chef. She has worked in restaurants across Richmond, including Sushi Han at one time.

Among her signature dishes are special sushi rolls, such as Han dragon rolls, and tuna monster rolls.

“The most popular has got to be the tuna monster and aburi seafood rolls,” David says. “But my favourite is the crispy, cream cheese California roll.”

Some of the mainstays on the menu include the ever-popular bento boxes for lunch and early dinner (until 4 p.m.), which feature a choice of chicken or beef teriyaki, karaage (fried chicken), prawn and croquette, or vegetable teriyaki. Each box also comes with rice, miso soup, salad and a choice of another side.

While they added their own touches to the menu when they took over the operation, David and Jane also altered the style of the restaurant to provide more seating for customers to eat inside.

“It’s expanded from a sushi bar to a licensed, 60-seat restaurant,” David says. “Most of the business before was done as a takeout... Now, with more seating we get a lot of the workers from the mall here for lunch.”

They also have the occasional local celebrity, such as Vancouver Canucks defenceman, Troy Stecher, who grew up eating at Sushi Han and is featured on a Youtube video with his mother at the restaurant.
